2. Ingredients:

  1. Butter: 200g, softened
  2. Caster sugar: 200g
  3. Eggs: 4, medium-sized
  4. Self-raising flour: 200g
  5. Baking powder: 1 tsp
  6. Vanilla extract: 1 tsp
  7. Raspberry jam (or strawberry jam): 4-5 tbsp
  8. Icing sugar, for dusting


  1. Preheat the oven to 180°C (350°F) and grease two 8-inch round cake tins.
  2. In a mixing bowl, cream the softened butter and caster sugar until light and fluffy.
